Our Peruvian cacao paste is made from the highly-prized Criollo beans that are grown under a canopy of shade trees in the fertile soil of the Pangoa and Ucayali regions in Peru. The beans are carefully harvested, fermented, sun-dried, and ground into a paste which preserves the complex flavor profile and health benefits of this delicious cacao. This cacao paste has a deep nutty flavor and luscious texture that is perfect for turning into a ceremonial cacao drink or can be used to make a variety of rich chocolaty creations. And, it is certified organic, kosher, Non-GMO Project verified, fermented and naturally gluten-free.
Our import team works with the small family farmers of this cacao to test samples from all of our cacao lots at an accredited laboratory using plasma-mass spectrometry (ICP-MS). This method accurately tests for the levels of naturally occurring heavy metals present in cacao that includes lead and cadmium.
All of our ceremonial grade cacao offers a rich supply of antioxidants, minerals such as calcium, magnesium, iron, and zinc, and unique compounds that have been shown to boost energy levels and feel-good brain neurotransmitters.
